Sugar-free Granola

It drives me crazy when a recipe is labeled “sugar free” but calls for exorbitant amounts of honey/maple syrup/brown rice syrup/coconut sugar/etc. It might be free of refined sugar, but anything that calls for a cup of honey should not be touted as sugar free. Such foods should be treated as treats and eaten sparingly. So when I say something is sugar free, I actually mean it. (more…)

Chocolate Chunk Zucchini Muffins

I had a shockingly productive weekend.

I went to a concert on Friday night (in Manhattan no less). I came home, changed, had dinner with a friend and then went back in to the city. Anyone who knows me is shocked. Apart from work, I avoid the island like the plague. A good weekend is one that doesn’t require me to go into the city at all. But this was really fun! The band was Zach Williams and the Bellow. Maple Sweet Potato Pecan Burgers

Every Wednesday night I get together with a group of women from my church for “life group.” We share a meal, pray, and invest in each others’ lives. In a city like NYC where relationships can be very transient and superficial, it’s nice to have a place where you can go to know and be known. These woman are a huge part of why I am so in love with life in Brooklyn!

Kale Chips

Kale chips have been all the rage of the blog world of late. Seems everyone is just raving about how wonderful they are.

I was skeptical.

When I am craving a chip, I want something crisp and salty. I’ve tried my own “chips” before – apple, sweet potato, etc. – without much luck. No matter how long I cook them, they always seem to come out on the mushy side. And while these experiments rarely taste bad, they certainly don’t satisfy a chip craving. (more…)

Chocolate Raspberry Shake

Around 9:30 p.m., I got hungry which is unusual. Probably had something to do with all the apartment cleaning that was going on around here. And I was craving something sweet which was even more unusual. I thought about stuffing a few dates with some feta and calling it a night, but that just didn’t sound all that appealing.
