Daily Eats: January 31

Breakfast:

  • 12 oz. coffee + ¼ C 1% milk + ½ tsp. cinnamon
  • Pumpkin pie baked oatmeal

Lunch:

  • Cheesey curry quiona casserole (I thought it would make 4 servings. Instead I ended up with 6. I hate to waste food and, to be honest, if it goes in the freezer, it never comes out.)

Dinner:

  • Pita pizza

Snacks:

  • Apple chips
  • Sliced cucumber and carrots with Greek yogurt (I added Mrs. Dash to make it kind of like a ranch dip)
  • Pumpkin & Greek yogurt (I was a little scattered this weekend and somehow ended up with 2 opened cans of pumpkin and 2 open containers of yogurt. So they’ll be featured a lot for the next few days.)
  • ½ C cottage cheese + ½ mixed berries
