Daily Eats: January 16

Breakfast:

  • 1/3 C  muesli + 1/3 C lite coconut milk + ¼ C mango
  • 8 oz. coffee + ¼ C 2% milk

Lunch:

  • 1 C Brussels sprouts
  • ½ Granny Smith apple
  • ¼ C caramelized onions
  • Cornbread

Dinner:

  • Mushroom & onion tart (whole wheat crust, ricotta cheese, Herbs de Provence, egg yolk, apple slices, mushrooms, caramelized onions, & Greek yogurt)

Snacks:

  • Mango smoothie (frozen banana, ½ C mango, 2 oz. Greek yogurt, ¼ C skim milk, ground cardamom)
  • 2 slices whole wheat soda bread + ½ T raspberry/pomegranate 100% fruit spread
