Daily Eats: January 5

Breakfast:

  • 1 large egg
  • 2 tbsp. salsa
  • 12 oz. coffee + 1/3 C 2% milk + ½ tsp. cinnamon

Lunch:

  • 1 C black bean chili

Dinner (I was hungry and trying to get rid of all the week’s leftovers):

  • 3 C sautéed spinach
  • 2 oz. tuna (canned in olive oil)
  • ½ C apple, cranberry, and fennel sauerkraut
  • 1 C sweet potato, baked and mashed with 2 tbsp. lite coconut milk
  • ¼ C pomegranate arils
  • 1 tbsp. unsweetened coconut flakes, toasted
  • 1 tbsp. fresh cilantro

Snacks:

  • ¼ C muesli + ½ C coconut milk
  • 4 oz. unsweetened applesauce + 1 tbsp. chia seeds
  • ½ C 2% milk
