Daily Eats: January 3

Breakfast:

  • ½ large avocado
  • 1 large egg
  • 2 tbsp. salsa
  • 12 oz. coffee + ¼ C 2% milk + ½ tsp. cinnamon

Lunch:

  • 3 C sautéed spinach
  • 2 oz. tuna (canned in olive oil)
  • ½ C apple, cranberry, and fennel sauerkraut

Dinner:

  • 1 C sweet potato, baked and mashed with 2 tbsp. lite coconut milk
  • ¼ C pomegranate seeds (a.k.a arils)
  • 1 tbsp. unsweetened coconut flakes, toasted
  • 1 C steamed green beans

Snacks:

  • 1 large banana
  • Green tea
  • 6 oz. plain Greek yogurt + ½ C fresh blueberries
  • 1 C 2% milk
